Shaken, Not Stirred With … Sunset Rubdown

SUNSET RUBDOWN: Raise your hands if you’re sure

Before blessing us with her wonderful pecan pie recipe, Camilla Wynn Ing, multi-instrumentalist for Montreal’s Sunset Rubdown, offers this simple advice: “Don’t wear black jeans when you make pie dough.” Sure thing, Camilla!

She adds, “It’s good with whipped cream or vanilla ice cream, and it’ll keep for a while in the fridge. This is our merch guy’s favorite.”

THE WORLD’S MOST SUPERLATIVE PECAN PIE

Ingredients:
3 eggs
1/2 cup brown sugar
1/2 cup cane syrup or golden syrup
1/2 cup maple syrup
1/4 teaspoon salt
1 tablespoon flour
3 tablespoons butter, melted and cooled
2 ounces bourbon
2 ounces espresso
2 cups pecans, some chopped and some whole

Step by step (ooh baby):
1. Preheat oven to 350 degrees.

2. Whisk together eggs and brown sugar. Then whisk in the following seven ingredients.

3. Fold in pecans.

4. Pour into a pre-baked pie shell and bake 40 minutes, or until set.

5. Cool on a wire rack for one hour.
